BATCH MEAL PREP GUIDE - May 24, 2025
Italian Sausage Mac & Cheese Bake | Steak Quesadilla | Sausage & Sweet Potato Hash | Carrots + Probiotic Ranch | Sourdough Discard Breakfast Cups
Here’s your meal prep guide for the week!
Each week I share a meal prep guide with my paid community members to help you cook seasonal, nutrient dense meals in an efficient, low effort way ;)
These recipes are always posted before the weekend so you have time to review the recipes and shopping list, collect the ingredients, and set some time aside for your batch prep session. Down below, you’ll see the menu for the week (with links to the recipes and grocery list), as well as a timeline on how to prep for this week.
keep in mind: I use traditional ways of cooking to receive the most nutrients possible, so some ingredients require them to be prepped hours in advance, even overnight before cooking.
Sourdough Discard Sausage, Egg, & Cheese Cups
These were a fun spin on one of my favorite sourdough discard pizza recipes. The base is just straight discard with some spices, and then they are loaded with your favorite breakfast items, all baked into one cup. These are the perfect start to your morning… loaded with protein & probiotics, they are sure to kickstart your metabolism and improve gut health. Pair these with a cup of bone broth or warm tea with a scoop of gelatin!

Steak Quesadillas
Another quesadilla… sorry not sorry 🙂. These sourdough tortillas (recipe linked later in this newsletter) are stuffed with raw cheddar cheese (we grab ours from Azure Standard) and our prepped steak, spiced a little extra with cumin and paprika. Jacob chose to pair his with a greek yogurt & avocado dip (recipe in my notes or on IG), and I did a greek yogurt & fermented salsa mix, plus some sauerkraut. Easy, delicious, & nourishing.

Italian Sausage Mac & Cheese Bake
Jacob was craving Mac & cheese this week so I threw together this bake with our prepped sausage and beef mix. I like these pasta bakes A LOT for a few reasons…
1️⃣ they are pretty much cooked in one pan (with the meat being prepped in advance)
2️⃣you can easily add gut healing benefits & protein by letting the noodles cook in bone broth rather than just boil in it
3️⃣ cottage cheese is easy to sneak into any pasta dish for a protein-packed creamy sauce

Steak & Avocado + Peach Blueberry Yogurt Bowl
This is one of those weird, yet satisfying lunch combos. Sweet & savory, protein packed, nourishing, & quick.

Sausage & Sweet Potato Hash
This is one of those meals that’s guaranteed to hit the spot. Our prepped sausage & beef mix, reheated with sautéed zucchini & onions, and our prepped Japanese sweet potatoes, topped with a pasture raised fried egg. Add some sauerkraut & avocado for that cool, tangy topping. It’s deep nourishing, protein packed, and incredibly easy. Perfect for lunch leftovers too!

Sourdough Discard Tortillas
These sourdough discard tortillas have completely changed the game in my kitchen. They’re soft, flavorful, and made with minimal ingredients—plus, they help reduce waste by putting that sourdough discard to delicious use. I batch prep and freeze them so we always have some ready to go for tacos, quesadillas, burritos, wraps—you name it. I used this simple, reliable recipe from Cooking Katie Lady, and it’s become a weekly staple. They’re gut-friendly, naturally fermented, and the perfect base for all your savory creations. This week you’ll need 18 tortillas in total so prep accordingly! I recommend making a large batch to store in the freezer (they are used often in my plans!!)

My goal with all of the recipes is to use the same variety of ingredients, just turned into different flavor profiles… that way your grocery trip is short & sweet.
I get it, life is BUSY. We are constantly on the go, places to be, people to see… but that shouldn’t stop you from investing time in yourself & in your health. When we eat for nutrition vs macros & looks, you’re entire life can turn around…
