Bone Broth Sausage Gravy with Roasted Potatoes & a Fried Egg
aka the breakfast of your dreams!! let me teach your how to turn this loaded breakfast into something nourishing, while still so delicious.

have you ever seen anything more gorgeous?? I got the inspiration from a breakfast place we were looking to go to this weekend. they called this lovely creation “The Nest”… “layers of hashbrowns, scrambled eggs, sausage, shredded cheese, smothered in a homemade creamy gravy”.
and of course, my first thought is to recreate this into something that’ll fuel my morning, rather than put me back to sleep. so without further ado, here’s my take on “The Nest”.
Bone Broth Sausage Gravy with Roasted Potatoes & a Fried Egg
serves 2-3
INGREDIENTS
For the Gravy:
½ lb pasture raised ground chicken sausage
½ lb pasture raised ground pork sausage (or 1 lb of either)
2 tbsp butter
2 tbsp organic all-purpose flour
1 ½ cups chicken or beef bone broth
¼ cup whole milk (or raw milk)
Sea salt + black pepper to taste
Optional: pinch of dried sage or thyme
For the Roasted Potatoes:
3 medium yellow potatoes, cubed
2 tbsp tallow or olive oil
Sea salt + black pepper
pinch of garlic powder and paprika
For Serving:
2–3 pasture-raised eggs (fried)
¼ cup shredded raw cheese (cheddar or similar)
2 green onions, thinly sliced
Optional: fermented hot sauce or chili flakes
INSTRUCTIONS
Roast the Potatoes
Preheat oven to 425°F.
Toss cubed potatoes with fat, salt, pepper, and optional spices.
Spread out on parchment-lined baking sheet in a single layer.
Roast 25–30 minutes, flipping halfway, until golden and crispy.
Make the Sausage Gravy
Brown the sausage in a skillet over medium heat, breaking into crumbles.
Once cooked, reduce heat slightly and stir in butter.
Sprinkle in the flour and stir to coat meat and absorb fat.
Slowly whisk in bone broth, stirring constantly until smooth.
Add milk and simmer 5–8 minutes, stirring often, until thickened.
Season with salt, pepper, and herbs if using.
Fry the Eggs
In a small skillet, cook eggs to desired doneness (sunny-side up, over-easy, etc.).
Assemble
Add roasted potatoes to a bowl or plate.
Top with generous spoonfuls of sausage gravy.
Add fried egg, sprinkle cheese, and finish with green onions.
Optional: a little fermented hot sauce or chili flakes on top.
