Hello Beautiful Humans!! Currently eating lunch as we speak… a big ole taco bowl with ground beef, cottage cheese, and avocado + Siete tortilla chips and a sumo citrus (cause I’m obsessed). I went on a nice 3 mile run this morning & signed up for a crossfit class tonight so I’m making sure I get plenty of protein to help my muscles recover and healthy fats for tons of energy!!
As I shared on Instagram, it is so important to make sure we are fueling and staying hydrated this summer as most of us are probably more active than usual.
Lunch can be the hardest (for me at least) to hold myself accountable for since I feel like I’m always on the go or don’t want to make a big mess in the kitchen to clean up.
SOOOOO… here’s FIVE recipes that I think will make your lunch menu that much easier :)
1. Southwest Cottage Cheese & Shredded Chicken Bowl
INGREDIENTS:
Cottage Cheese (I like the brand Good Culture) mixed with salt & pepper
Shredded Chicken (from my Crockpot Rotisserie Chicken recipe located in Week 1’s Recipe Plan)
Homemade Guacamole… mashed avocado, diced tomatoes, diced red onion, lime juice, salt, pepper, and cilantro
Mild Salsa
Topped with mild chili powder, cumin, and more cilantro
2. Open Face Chicken Salad Sandwich on Sourdough
This is a super easy one you can prep in advance in the beginning of the week…
INGREDIENTS:
canned chicken
1/2 plain greek yogurt & 1/2 avocado/olive oil mayo
Diced celery
Diced yellow onion
Red grapes, halved
Salt, pepper, and garlic powder
Topped with everything but the bagel seasoning
Grass-fed Cheddar Cheese Slice
Sourdough Bread
3. Burger Plate
INGREDIENTS:
Arugula Mix
Citrus Orange ( or any refreshing fruit)
Grass-fed Cheddar Cheese
Turkey Burger… or Grass-fed Beef Burger/Pasture Raised Chicken Burger. THESE Pasture Raised Turkey Burgers can be a great option to keep in the freezer… but I personally just have THESE Trader Joe’s ones… no preservative/additives, seed oils, or added sugars, so still a good option if you can’t find pasture raised.
Avocado
4. TUNA SALAD PLATE
This is another good option to prep in the begging of the week! Pair with sliced tomato, lettuce, and onion on sourdough bread for a yummy tuna sandwich or use chips/crackers like this to dip!
INGREDIENTS:
Canned Tuna
1/2 plain greek yogurt, 1/2 avocado/olive oil mayo
Dijon mustard
Salt, pepper, garlic powder, onion powder, and dill
Optional: add hard boiled eggs, diced celery, diced red onion, diced green onions, diced bell peppers, etc… have fun with it!!
Fruit of choice
Dill Pickles
Siete chips or Simple Mills Crackers are good dipping options
5. Chicken & Bacon Sandwich on Sourdough
This is a DELICIOUS one. I recommend prepping all of the items in the sandwich in the beginning of the week, but building the sandwich the day of or night before.
Sourdough Bread
Greek Yogurt + Avocado Spread
Sliced Chicken Breast (seasoned and cooked in olive oil, garlic powder, onion powder, salt, pepper, and Italian seasoning) OR uncured deli turkey
Uncured Bacon… we get THIS one from Costco. Life changing bacon.
Raw Honey
Sprinkle of oregano
